'Give us back Zimin LO'
Sassari I have dedicated songs and poems, first to see it disappear from the butcher (at least officially) the beauty of six years ago. The local gourmets, however, have not forgotten.
The zimino , the typical dish of the capital Turritano, banned by the EU after the disease of "mad cow" disease, may soon return to being the undisputed protagonist on the boards of Sassari. Se la fiorentina, messa al bando dal Consiglio dei ministri dell’agricoltura dell’Unione europea insieme allo zimino , è tornata legale da un anno e mezzo, non si capisce perchè non possano essere liberalizzate le interiora del vitello. É questo il presupposto dal quale partono Beneanti e Ruiu, che sottolineano anche come « lo zimino , oltre che un piacere della tavola, può essere anche un importante sostegno all’asfittico mercato delle carni nostrane. La nostra Regione deve aprire un tavolo di confronto con il ministero della Salute per ripristinare la vendita legale di questo pezzo di storia sassarese ».
E se, come recita una canzone popolare, sulle tavole dei sassaresi non possono mancare “vinu, zimìnu e ciògga” , il secondo tassello, di certo il più richiesto, potrebbe presto tornare al suo posto.
